Evidently, I bake. Who knew?

These are three different kinds of muffins:

  • Bacon & Cheese
  • Kale, Spinach & Collard Greens & Cheese
  • Japaleno & Cheese

I made these from scratch*. I cooked the bacon yesterday in preparation for this recipe and the rest of the recipe took almost no time at all. It really was a cinch.   

*Please note, whenever possible, I used organic ingredients.

These muffins are for Chippy and my camping trip to Joshua Tree this weekend.

We’re going with a large group of people and, at my suggestion, we are all chipping in to do meals together, rather than each couple/tent bringing their own food (which always ends in massive amounts of over-buying and then waste).

We planned out a simple menu in advance and I assigned each couple/tent the items from the menu that they would need to bring as their contribution.

For example, for breakfast we are having the muffins, which are brought and made by me; we’re having fruit salad, which is being freshly prepared by my friend, J; and coffee and creamer were brought by another couple. Get the gist?

I’m very excited! Oh, and the muffins… I taste tested and they are b-o-m-b. Home cooked splurges for the WIN!

Oh, did I mention Chippy makes Indian food from scratch?

Powdered curry?! Ha! No pre-mixed spices exist in this house! We roast, hand grind in our morter and pestle and mix … and our food tastes that much better because of it.

Today’s eats: delicious!

Breakfast: chocolate protein shake

Snack: perfectly hardboiled egg (mmmmm)

Lunch: Oven roasted turkey breast slices wrapped around eggplant hummus, tomatoes and cucumber.

Mmmm! So far, I’ve had one and am making another. I’ll probably have one more and then…

Afternoon snack: either a hard boiled egg or fresh peas in the pod from the farmers’ market bounty I picked up on Sunday. ;) I’ll decide what to eat in the moment - whichever sounds better.

Dinner: I’m having my lovely girlfriends over for champagne/wine, a veggie plate and cheese and crackers. I’ll probably have a sausage after dinner for more protein, but mostly dinner will be cheese and wine. And that’s okay because I value my time with my girls and living a balanced life includes social interactions.

No workout today. I’m sore as hell from my workout yesterday so I’m taking a well earned rest day!

Tonight, after my girls leave, I’ll be doing precisely this:

Lunch Today

Salad: Red lettuce, Persian cucumber, orange bell peppers, tomatoes, quail eggs, smoked Gouda and a sausage link, followed by a nectarine. 

Mmm!

Breakfast: Polenta hash with cherry tomatoes, applewood smoked bacon, two poached eggs and a pesto drizzle.

From my favorite breakfast place in LA. :D

Breakfast:

Carmelized onions, smoked salmon, goat cheese and fresh chive omlette. 

Split right down the middle with Chippy.

Mmmmm.

Quick dinner:

Shrimp cocktail with extra horseradish; and a tomato, fennel, and onion salad with fig balsamic vinegar from a farm in Santa Barbara and olive oil, fresh ground pepper and sea salt.

Dinner: marinated turkey breast with sage, topped with fresh chives, roma tomato & collard greens. :)

Goat cheese, chive and tomato omelette.

5 minutes to make, including veggie chopping time. Trust me, you need to make time for this kind of breakfast in your morning. :)

Oven baked chicken breast and yellow squash.

Sandwich for on our hike, later: spanish chorizo, arugula and artichoke. Mmm!

Brunch:

Frittata - pork belly, yellow onion, garlic, crimini mushrooms, yellow squash, roma tomatoes and topped with quail eggs.

Whooo hoo! I’m starvin!

Dinner: spaghetti squash with homemade meat sauce, with leftover beef roast from last night. Added some mushrooms, garlic and basil in, as well as some peppers, topped with fresh basil and now we EAT!
