&lt;p&gt;I immediately fell even deeper in love with nature (if that’s even possible) and took a ton of photos.  So look out! I’ll be posting pictures of the glorious hike all week. &lt;/p&gt;

1. Coconut creamer....</title><description>&lt;img src="http://25.media.tumblr.com/591886d985b8e44edc4e1d57e054c985/tumblr_mjxbolqMoe1qesy9vo1_500.jpg"/&gt;&lt;br/&gt;&lt;br/&gt;&lt;p&gt;&lt;strong&gt;These are a Few of My Favorite Things!&lt;/strong&gt;&lt;/p&gt;
&lt;p&gt;1. Coconut creamer. It’s another tool in my arsenal these days that helps me stick to being Paleo. Yes, there’s sugar in there, but it’s organic cane sugar, so it’s not as bad as it could be. I’m in!&lt;/p&gt;
&lt;p&gt;2.  The beets in my garden are growing. Little teeny tiny sprouts of awesome, that’s what they are. And they are red al-red-y. (Ok. That was super lame, I admit, but I’m really excited to eat my beets later this summer!) &lt;/p&gt;
&lt;p&gt;3. Yoga: I’m doing it! Today after work I’ll be doing a bit’o’stretching, yes I will! I’m looking forward to stretching and meditation, since I had a pretty stressful couple of days. Each week I plan to do yoga once, for relaxation of mind and body. &lt;/p&gt;
&lt;p&gt;4. I’m super proud of how, after a weekend of drinking debauchery, I jumped RIGHT back into being Paleo. #heckyeahme&lt;/p&gt;
&lt;p&gt;5. Tonight I’m making liver and onions for dinner.  Maybe you think it’s weird to be excited about that … but I think it’s kind of a delicious meal… Plus, I’m using my mom’s recipe for the first time (hi Mom!). First: bacon fat. Then: tons of onions. Lastly: liver. Aaaand that’s about all I know (Mom, get ready for a follow-up phone call after work today. I’m unprepared for this venture. I see that now.) I’ll also be serving a veggie of some sort. Probably Asparagus. Yummo.&lt;/p&gt;
&lt;p&gt;6. Lastly, this is my health goal for the coming week: exercise twice. Maybe that doesn’t seem like much to you but seeing as I haven’t been working out at all, twice a week is a big jump for me. Then, in the following weeks, I’ll push myself to go more and more frequently until I’m up to four times a week. I’m not interested in being an exercise-every-day type person. It’s just not for me.  That being said, my health is important to me, so it’s time to get that balance restored.&lt;/p&gt;

&lt;p&gt;&lt;strong&gt;1. &lt;/strong&gt; &lt;strong&gt;A spontaneous day trip to San Diego last Saturday&lt;/strong&gt;. Much laughter, kisses and beer was shared. Visited my two favorite breweries in San Diego: Hess Brewing Co. And Manzanita Brewing Co. &lt;/p&gt;
&lt;p&gt;&lt;strong&gt;2. &lt;/strong&gt; &lt;strong&gt;Gardening&lt;/strong&gt;. Sunday I spent the day outside getting my hands dirty. Planting, sowing, digging, weeding, planning… All whole drinking some delicious Hess beer that I brought back from San Diego. It was a good day.&lt;/p&gt;
&lt;p&gt;&lt;strong&gt;3.  Having lost 7.5 lbs in about two and a half weeks&lt;/strong&gt;. I’m super stoked about that and EXTREMELY happy to be back into the 130s, where I feel most comfortable with my body. I’m aiming for losing 10 pounds by the end of my first month of Paleo, which is about a week and a half away.&lt;/p&gt;
&lt;p&gt;&lt;strong&gt;4.  Paleo&lt;/strong&gt;. Stick sticking with it almost religiously Monday - Friday and then on the weekends splurging on beer and the occasional meal. - but all in all being quite conscious of what is going into my mouth all the time. The scale is reflecting my efforts quite well. To reiterate, I haven’t worked out for a single day since I started Paleo. My entire loss so far is due to food intake - or the change of food intake, rather. I really happy with the results and will be starting working out soon. Maybe even today. (Ha! …well, it could happen.)&lt;/p&gt;
&lt;p&gt;&lt;strong&gt;5. Upping my water intake!&lt;/strong&gt; Yeahhhhhh buddiesssss! I have been consistent in my intake for the last few days - just call me the Hydration Queen!&lt;/p&gt;

&lt;p&gt;&lt;strong&gt;2. Romaine lettuce leaves instead of taco shells&lt;/strong&gt;. I ate that shit right up last night for dinner because it was soooooo satisfying and delicious! The crunch was just right. Sorry there’s no picture!&lt;/p&gt;
&lt;p&gt;&lt;strong&gt;3. My most recent DIY projects&lt;/strong&gt;. &lt;br/&gt;Chalkboard paint on the base of wine glasses:&lt;/p&gt;
&lt;p&gt;My freshly painted roadside-rescue dresser. The black is leftover chalkboard paint and the champagne is a mix of a metallic gold and metallic brown I had laying around from when I painted my house a couple years ago.&lt;/p&gt;
&lt;p&gt;&lt;strong&gt;4. Taking my measurements and being happy with the numbers.&lt;/strong&gt; 38.5-29-40 for the of you who care. That’s right, baby got back….and front!&lt;/p&gt;
&lt;p&gt;&lt;strong&gt;5. That it’s Tuesday.&lt;/strong&gt; Because ANY day of the week is better than Monday!&lt;/p&gt;
