Salads for the week
Had two different kinds of them yesterday (Tomato with mozzarella and smoked almond breadcrumbs & grilled fennel with dates, cilantro and pistachios). I’ll count them as one since I only ate a few bites of each.
And the second one is lunch today: shredded lettuce, chicken, corn, tomatoes, red onions and grilled bell peppers. Mmm!
Three more to go this week to be sticking to my goals...

June Goals
Taking a page from Sarah over at waiteloss, here are my goals for June.
Food/Fitness Goals
Drink 100 oz of water/day
Eat at least 80 g of protein/day
Eat at least 5 salads/week
Eat fish at least 1x/week
Run 2 miles of sprints 2x/week with Chippy
Do Jillian Michaels 30 Day Shred or do my floor workout 3x/week
Take 2 rest days/week
Don’t get on the scale more than 1x/week

Yesterday I walked around Portland for about 7 miles.

New addition!
Some of my closest friends had a baby this morning! I’m so happy I could burst!! This is such an amazing and exciting time for them. This is the first baby born to our group of friends … And certainly won’t be the last!
I can’t wait to meet him, hold him and snuggle him up!

Vacation win?
I only ate half of my omlette. It was delicious but instead of gorging myself I decided to stop, breathe, and ultimately step away. I’m full… I don’t need it even if it IS delicious. :)
Also, file this under “workout”: we walked about 5 miles overall yesterday from bar to pub to restaurant to… All over! :)
I think so far I’m doing okay!

The Countdown Begins
Hey guys and gals!
June 1st is quickly approaching! Only 8 days left! Let’s make these last 8 days really count, eh? How about pushing for one extra unplanned workout in there? Or one extra homemade healthy and balanced meal? You can do it and your body will thank you!
For me, the challenge ends tomorrow. Why? Because I’m heading out for vacation to Portland (!!!) early Thursday...

HIIT Workout
Woke up at 6:00 AM and ran 2 miles of sprints with Chippy. Went hard. It felt fantastic. The air was cool and we saw a white heron in the LA River. Now I’m sitting here typing this & sweat is dripping down my face. I can dig it. ;)
One more day until I take my pictures for the I Love My Summer Bikini / Bathing Suit Body Challenge. I can’t believe the challenge is over for me...
