Hey Jeff!
If you are going to make the dates rolled in coconut from scratch, I’d recommend cutting up the dates or popping them in the blender for just a moment. You really need the “sticky-ness” from the date exposed for the shredded coconut to stick. Then I’d form them into a little log shape and roll them in the shredded coconut.

With Christmas around the corner...
I’m watching my intake this week, big time! I intend to splurge on Christmas day with plenty of wine, cheese and grub (my dad and step-mom are phenomenal cooks) and don’t want to feel “guilty” about it.
As I’ve begun to lose weight, I’ve noticed how much I used to associate eating with feeling guilty. I’d eat something and then I’d be mad at myself....
